Ummm! What a delicacy the ripe egg masses of fishes feature for! Yes my friends, I am thinking about “roe” of fishes and marine invertebrates like sea urchins. Although a lot of popular fish names come up while talking about roe, but none is as popular as the sturgeon roe that is processed to produce the world famous black caviar.

The main source of caviar is sturgeon. In addition, the Caspian Sea is the largest producer in the entire world. It is the Iranian and Russian fisher-men, those who are mostly involved in collecting the roes and selling it to the market. There are various types through which they get extracted. One of the most notable sources is the beluga. This is said to be the source through which the popular ones are produced.

Considered the largest of all, they found in the entire Caspian Sea region, it is the only sturgeon tagged as a carnivore. The length of sturgeon can extend up to 20 feet in length. Most of them are weighing about 600 kg or more. However, due to lot of pollution and modernized fishing technologies, these types of weighted sturgeons are extremely rare nowadays.

During the early 20th century, most of them produced through their help.. However, the numbers have drastically lowered down due to the scarcity of the species in the Caspian Sea along with illegal fishing practices.

These eggs are the most expensive things to search from these.. The color of eggs varies from one fish to another. While you can find light grey color eggs occurring in some varieties there are certain ones that produces black colored eggs. Although the taste of the roes should not find any difference due to the color variation, but the most preferred color are the lightest gray ones.

The major difference of CFV from other is that these particular species starts to lose their bony scales according to its length after it starts growing in age. Most of the beluga caviar is grey in color with a silvery touch. The head is a large one with compact features. There is a pointed snout attached through the large mouth it possesses. Most of the full- grown adults have a mouth size of approximately 10 inches wide. Beluga’s can carry their egg in their body for more than a single season. The female is matures and fertile after it reaches the age of twenty -five years.

According to the recent survey, the particular species is becoming extinct at a constant pace. As a result, production of beluga caviar has decreased due to less availability of this fascinating food delicacy.
